Briongos de Cervera (32 inh. in 2008; unofficial website) is said to have been named for the bryony (Latin, Bryonia), a plant that grew profusely in the area. The village was part of the alfoz (group of villages) of Tobaldillo. On 21 July 1125, Queen Urraca granted the alfoz to Juan, Abbot of Santo Domingo de Silos; the donation was confirmed six decades later by Pope Urban III.

The flag of Briongos de Cervera is prescribed by a Decree adopted on 8 July 1999 by the Government of the Province of Burgos, signed on 27 July 1999 by the President, and published on 6 August 1999 in the official gazette of Castilla y León, No. 151, p. 8,007 (text).
The flag, which was validated by the Chronicler of Arms of Castilla y León, is described as follows:

Flag: Quadrangular, tricolor. In the heart is the coat of arms of the town. On the right side, a golden triangle converging to the coat of arms, the upper half gules or red, the lower half, vert or green.
